• 6 large egg yolks
• ½-3/4 cups sugar depending on
• 2 cups milk
• ¼ teaspoon cloves
• Pinch cinnamon
• 1 cup heavy cream
• 1 ½ teaspoon nutmeg
• 1 ½ teaspoons vanilla extract
• Humboldt Apothecary’s Love Potion
or Sweet Jane Tincture
• 4 egg whites, optional
Place egg yolks in a large bowl. Beat with a whisk or electric mixer until they become lighter in color, then slowly add the sugar while continuing to mix. Whisk or beat at high speed until fluffy.
In a thick-bottomed saucepan, combine the milk, cloves, cinnamon and slowly heat until the mixture is hot. It should steam but do not let it boil.
Next, add half of the hot milk mixture into the eggs, constantly stirring while you add the mixture. Pour the mixture back into the saucepan.
Cook the eggnog on medium heat, stirring constantly with a wooden spoon, until it begins to thicken slightly (the back of the spoon should be lightly coated). If you have a thermometer, cook until the mixture reaches 160 degrees F. Again, do not let the mixture boil or it will curdle, which you do not want. If it happens to curdle, you may be able to salvage your creation by running it through a blender.
Remove from the heat and stir in the cream. If any curdled bits have formed, strain through a mesh strainer.
Let cool for an hour or so.
Now, stir in vanilla and nutmeg. Chill.
Optional egg whites. Beat egg whites with an electric mixer until they reach soft peaks. Add a teaspoon of sugar and continue to beat until they reach stiff peaks. Gently fold into eggnog.
You may serve eggnog cold or warmed, your choice! Pour into your glasses and add your desired dose of Love Potion or a Sweet Jane of your choice (we recommend one dropperful per serving). Enjoy!
