5-8 blackberries

3/4 oz Blackberry Thyme Syrup

1/2 oz lemon juice

1/8-1/4 oz vanilla extract (optional)

soda water

1-2 mL of Humboldt Apothecary Tincture


In a tall glass place blackberries and muddle. Add syrup, lemon juice and vanilla to the glass. Add ice. Top with soda water & stir. Garnish with thyme sprig and a blackberry.

Blackberry Thyme Syrup

1 cup blackberries

1/2 cup brown sugar (or any other natural sweetener)

1 cup water

1 Tbsp of fresh thyme leaves (stems removed)


In a medium saucepan add blackberries, brown sugar, water and thyme. Slowly bring to a boil over medium heat while stirring occasionally. Once it reaches a boil, reduce heat to low and simmer on low. Smash blackberries with the back of a spoon while simmering. Simmer for 10 minutes until slightly reduced.  Cover the saucepan and allow it to cool. Strain in a jar (discard spent fruit). Secure with lid and store in refrigerator 3-6 months.
